RTÉ Today's TV Home Cook is a nationwide search to find Ireland's next standout home cook. Eight contestants from across the country have been selected and mentored by Trisha Lewis as they take on a series of cooking challenges in a professional TV kitchen for the very first time.
Over two days, they will share their recipes.
Meet Margaret, who made hearty dillisk scones with a wild garlic pesto.

- 500g flour
- 1.5 tsp bread soda
- 2 tbsp dillisk
- 1 onion
- 2 garlic cloves
- 85g butter
- 1 egg
- 275ml buttermilk
- 100g cheddar
Method
- Preheat oven to 180°C.
- Toast dillisk briefly and crumble.
- Fry onion and garlic until soft, then cool.
- Mix flour and bread soda, rub in butter.
- Add cheese, dillisk and onion mixture.
- Mix egg with buttermilk and add to dry ingredients.
- Bring together into dough, shape into circle and cut into triangles.
- Brush with egg and bake for 15–20 minutes until golden.
