RTÉ Today's TV Home Cook is a nationwide search to find Ireland's next standout home cook. Eight contestants from across the country have been selected and mentored by Trisha Lewis as they take on a series of cooking challenges in a professional TV kitchen for the very first time.
Over two days, they will share their recipes.
Meet Kay, who prepared a summery pavlova with lemon curd.

Pavlova
- 4 egg whites
- 200g caster sugar
- 1 tsp cornflour
- 1 tsp vinegar
- 1 tsp vanilla
Lemon curd
- 2 lemons
- 130g sugar
- 4 egg yolks
- 80g butter
Topping
- 250ml cream
- Icing sugar
- Fresh berries
- Mint
Method
- Preheat oven to 180°C, then reduce to 100°C after placing pavlova inside.
- Whisk egg whites to stiff peaks, then gradually add sugar until glossy.
- Fold in cornflour, vinegar and vanilla.
- Shape into a nest on lined tray and bake for 1 hour. Cool completely.
Lemon curd
- Cook lemon zest, juice, sugar and egg yolks over gentle heat, stirring constantly.
- Once thickened, remove from heat and stir in butter. Cool.
Assembly
- Whip cream with icing sugar.
- Top pavlova with lemon curd, cream and fresh berries.
