RTÉ Today's TV Home Cook is a nationwide search to find Ireland's next standout home cook. Eight contestants from across the country have been selected and mentored by Trisha Lewis as they take on a series of cooking challenges in a professional TV kitchen for the very first time.
Over two days, they will share their recipes.
Meet Rosaria, who prepared a pasta with broccoli and sausage.
- 300g orecchiette pasta
- 200g Italian sausage
- 2 packs tenderstem broccoli
- 200g breadcrumbs
- 1 garlic clove
- 4 anchovies
- Chilli flakes
- Olive oil
- Parmigiano
Method
- Cook pasta in salted boiling water until just under al dente.
- Toast breadcrumbs with anchovies in olive oil until golden and crisp. Set aside.
- In a pan, heat olive oil and add garlic and chilli flakes.
- Remove sausage from casing, crumble into pan and cook until browned.
- Add chopped broccoli and a splash of pasta water. Cover and cook until tender.
- Add drained pasta to the pan along with parmesan and a little pasta water.
- Toss everything together until coated in a glossy sauce.
- Serve topped with crispy breadcrumbs.
