RTÉ Today's TV Home Cook is a nationwide search to find Ireland's next standout home cook. Eight contestants from across the country have been selected and mentored by Trisha Lewis as they take on a series of cooking challenges in a professional TV kitchen for the very first time.

Over two days, they will share their recipes.

Meet Rosaria, who prepared a pasta with broccoli and sausage.

  • 300g orecchiette pasta
  • 200g Italian sausage
  • 2 packs tenderstem broccoli
  • 200g breadcrumbs
  • 1 garlic clove
  • 4 anchovies
  • Chilli flakes
  • Olive oil
  • Parmigiano

Method

  1. Cook pasta in salted boiling water until just under al dente.
  2. Toast breadcrumbs with anchovies in olive oil until golden and crisp. Set aside.
  3. In a pan, heat olive oil and add garlic and chilli flakes.
  4. Remove sausage from casing, crumble into pan and cook until browned.
  5. Add chopped broccoli and a splash of pasta water. Cover and cook until tender.
  6. Add drained pasta to the pan along with parmesan and a little pasta water.
  7. Toss everything together until coated in a glossy sauce.
  8. Serve topped with crispy breadcrumbs.
