Home cook Gwen Delaney loves seasonal cooking with big flavours, and this spin on a classic tiramisu is exactly that.

RTÉ Today's TV Home Cook is a nationwide search to find Ireland's next standout home cook. Eight contestants from across the country have been selected and mentored by Trisha Lewis as they take on a series of cooking challenges in a professional TV kitchen for the very first time.

Meet Gwen Delaney, a 65-year-old home cook from Sutton, Dublin 13 and teacher/manager at Bracken Hill Nursery School.

Tiramisu
- 150–200g ladyfingers
- 120ml limoncello
- Juice of 3 large oranges
- 500g mascarpone
- 4 tbsp icing sugar
- ½ cup milk
- Zest of 2 lemons
- Juice of 1 lemon
- 80% dark chocolate (for grating)
Mixed Berry Compote
- 500g frozen mixed berries
- 50–80g golden caster sugar
Method
- In a wide shallow dish, mix the orange juice and limoncello together.
- Dip half of the ladyfingers briefly (3–5 seconds) until just softened, then arrange them in a single layer in your dish.
- In a large bowl, beat mascarpone, icing sugar and milk until smooth.
- Add lemon zest and juice, then beat again until thick and creamy.
- Spread half the mascarpone mixture evenly over the biscuits.
- Dip remaining biscuits and layer again.
- Spread over the remaining mascarpone mixture.
- Grate dark chocolate generously over the top.
- Chill for at least 1 hour before serving.
