These biscuits are filled with a cream and marmalade filling and will melt-in-your-mouth.

Ingredients

Makes: 12 biscuits/6 sandwiches

Bake: 13-15 mins

Biscuits

  • 125g very soft butter
  • 25g icing sugar
  • Dash vanilla essence
  • 110g plain flour
  • 15g cornflour

Filling

  • 80g Marmalade
  • 80g butter
  • Dash vanilla essence
  • 80g icing sugar

150g dark chocolate melted

Method

  1. Preheat your oven to 190C/170C fan.
  2. Line 2 baking trays with parchment paper, set aside.
  3. For the biscuits, in a bowl, beat the butter, vanilla & Icing sugar together until pale and soft.
  4. To this add the sieved flour and cornflour, mix well.
  5. Spoon the batter into a piping bag fitted with a medium star-shaped nozzle and pipe 12 biscuits on the lined tray.
  6. Place in the centre of the oven & bake for 13-15 minutes or until lightly golden brown.
  7. Remove and allow to cool.
  8. Once cold, carefully dip half of each biscuit in chocolate and set aside to firm up.
  9. For the filling, in a bowl, cream the butter, vanilla and icing sugar until soft and smooth.
  10. Place this into a piping bag fitted with a small round nozzle.
  11. To assemble, pipe a circle of buttercream on the flat side of 6 of the biscuits, leaving space in the centre for the marmalade.
  12. Spoon some marmalade into the centre and sandwich with another biscuit.
