Creamy Rice Pudding with Coconut and Mango

Ingredients

  • 225g Arborio or any short grain rice
  • 400ml coconut milk
  • 250 whole fat Milk
  • 50ml cream
  • 1 tablespoon cinnamon powder
  • 1 teaspoon clove powder
  • 2 cardamoms cracked
  • 1 tablespoon vanilla extract or vanilla bean
  • 2 tablespoons sugar
  • 1 tablespoon mascarpone
  • 2 Mangos
  • 2 tablespoons desiccated coconut
  • Zest of 1 lime

Method

  1. Place heavy Sauce pot over medium heat, add milk, cream, coconut milk and sugar mix well.
  2. Add cinnamon, cardamom, clove, vanilla , rinse rice under cold water and add to milk, gently cook for 30 minutes, stirring occasionally. Add mascarpone and a little more warm milk if needed, the mixture should be nice and creamy.
  3. Peel and dice the mangos, add the zest of lime.
  4. Place rice Pudding in to serving bowls, spoon on mango and sprinkle on the coconut.
