Bring a taste of the summer to your week with this luscious dessert.
Ingredients
- 225g Arborio or any short grain rice
- 400ml coconut milk
- 250 whole fat Milk
- 50ml cream
- 1 tablespoon cinnamon powder
- 1 teaspoon clove powder
- 2 cardamoms cracked
- 1 tablespoon vanilla extract or vanilla bean
- 2 tablespoons sugar
- 1 tablespoon mascarpone
- 2 Mangos
- 2 tablespoons desiccated coconut
- Zest of 1 lime
Method
- Place heavy Sauce pot over medium heat, add milk, cream, coconut milk and sugar mix well.
- Add cinnamon, cardamom, clove, vanilla , rinse rice under cold water and add to milk, gently cook for 30 minutes, stirring occasionally. Add mascarpone and a little more warm milk if needed, the mixture should be nice and creamy.
- Peel and dice the mangos, add the zest of lime.
- Place rice Pudding in to serving bowls, spoon on mango and sprinkle on the coconut.
