Ingredients
Linguine
- 500g Raw King Prawns.
- 400g Linguine Pasta.
- 4 cloves Garlic peeled and sliced.
- 2 Red Chillis thinly sliced.
- 200g Cherry Tomatoes on the Vine.
- 200ml Olive Oil.
- I large bunch of Parsley chopped.
- 1 Lemon.
Garlic Bread
- 1 small French Stick, sliced
- 4 cloves of Garlic.
- 100ml Olive Oil.
- Few sprigs Thyme or 1tps Dried.
Method
- Bring a large pot of water to the boil, season with salt, add linguine pasta and cook as per packet instructions usually about 8 to 10 minutes.
- While the pasta is cooking heat a frying pan over a moderate heat for the prawns.
- Add 100ml olive oil and gently cook the garlic and chillies for a couple of minutes, add the prawns and toss for a minute, add cherry tomatoes and toss, season with salt and pepper, add the cooked linguine with a little of the pasta water.
- Add the rest of the olive oil, the zest and juice of the lemon and the chopped parsley.
- Heat a pan over moderate heat for the garlic bread, add the garlic, thyme and bread and lightly brown on both sides.
- Serve pasta in a bowl with the garlic bread, with a side salad.
