Eva Pau's Asian Christmas: spicy hasselback potatoes

Ingredients

Serves: 4 as a side
Prep time: 20mins
Cook time: 60mins

  • 8 medium potatoes
  • 150g butter, room temperature
  • 3 tbsp gochujang
  • 4 cloves garlic, finely minced
  • ½tsp salt
  • ½ Lee Kum Kee Premium Mushroom Seasoning Powder
  • ¼tsp black pepper
  • 2tsp Lee Kum Kee Pure Sesame Oil
  • 1 tsp Lee Kum Kee Chiu Chow chilli oil
  • 1 spring onion, chopped

Method

  1. To prepare the potatoes, place a chopstick on either side of the potato. Use a knife to cut thin slices into the potato. For the first few slices, don't slice all the way through, but after the third or fourth slice, you can slice all the way down and the chopsticks will help you from cutting all the way through. Repeat this until all the potatoes are prepared.
  2. In a bowl, mix together the butter, gochujang, garlic, salt, mushroom powder black pepper and sesame oil and set aside.
  3. Place the potatoes onto a baking sheet and spoon a tablespoon of the gochujang butter on top of each potato.
  4. Bake in the oven at 200 degrees for 50-60minutes.
  5. To serve, sprinkle some chopped scallion over the potatoes and drizzle with chilli oil.
