Ingredients

Makes one loaf

For the loaf

  • 200g caster sugar
  • 170g softened butter
  • 1 tsp vanilla extract
  • 2 eggs
  • 250g plain flour
  • 2 tsp baking powder
  • 1 tsp bread soda, sifted
  • ¼ tsp salt
  • 200g sour cream

For the brown sugar sprinkle

  • 80g dark brown sugar
  • 2 tsp ground cinnamon
  • Glazed orange slices, for the top

Method

Preheat the oven to 180°C/fan 160°C/gas 4.

  1. Line a 2lb tin with parchment
  2. Combine the brown sugar and cinnamon in a bowl and set aside to sprinkle.
  3. To make the loaf, mix the plain flour, baking powder, sifted bread soda and salt together.
  4. Whisk the caster sugar, butter, vanilla and eggs together in a bowl until light and fluffy.
  5. Then fold in some of the flour mix and the sour cream, and when combined then add more flour and sour cream until all incorporated.
  6. Spoon a 1/3 of the batter into the tin, then sprinkle a 1/3 of the cinnamon brown sugar over and keep layering up ending with the sugar sprinkle.
  7. Bake for about 55 minutes or baked until a skewer is inserted and comes out clean.
  8. Cool slightly in the tin and then place on a rack to cool completely.
  9. When completely cold and ready to serve, arrange glazed orange slices on top.

To make glazed orange slices

Place slices of oranges on a baking tray, dust with icing sugar and bake at Fan 160°C for 10 -12 minutes and turn over, baking for about 10 minutes – keep an eye on them.
