Ingredients

A great way to make tasty pancakes with a healthy trick of flavours. You can use any fruits from pears, plums or go for exotic like pineapple, or kiwi.

The eternal question of bicarbonate of soda or baking powder. If using Buttermilk, then you just need some bicarbonate of soda because the acid in buttermilk reacts with the alkaline bicarbonate of soda to produce the carbon dioxide (CO2) needed for leavening.

Baking powder already contains its own acid, so it is used in recipes that lack an acidic ingredient like milk.

Using baking powder instead of baking soda with buttermilk will still work but it might hinder the rise of your pancakes and leave a metallic taste.


Serves 4

  • 100g plain flour
  • 1 pinch bread soda powder
  • 1 egg
  • 1 tbsp honey, optional
  • 1 pinch cinnamon powder
  • 200-250ml buttermilk
  • 2 apples, pink lady, red delicious or others, sliced into 3mm thick
  • Butter for frying
  • 1 tbsp icing sugar

To serve:

  • Whipped cream
  • Butterscotch sauce or other caramel sauce

Method

  1. In a bowl, combine the flour, bread soda powder with the egg, honey, cinnamon and buttermilk to create a thick batter.
  2. Set aside for 30 minutes to settle or until needed.
  3. Slice the apples into 3-4 mm thick slices, core the slices and dip them in the batter.
  4. Warm a pan over low heat and add the butter and some oil.
  5. Once melted, place the dipped apples on the pan.
  6. Cook over low heat for 2-3 minutes then flip the apple pieces and cook for a further 2 minutes or so until the batter is cooked through.
  7. Remove from the pan and serve immediately with a sprinkle of extra cinnamon and icing sugar.
  8. Add a dollop of Greek-style yogurt or freshly whipped cream, some caramel sauce.
  9. Enjoy while warm.
