Ingredients
Serves 2
Mayo Pancakes (Buns):
- 125g flour
- 15g sugar
- 5g baking powder
- 2g baking soda
- Pinch of salt
- 150ml buttermilk
- 1 tbsp mayo
- 1 egg
- 15g melted butter
- 2.5ml vanilla extract
Crispy Chicken:
- 2 boneless chicken thighs, butterflied
- 240ml buttermilk
- 5ml hot sauce (optional)
- 125g flour
- 60g cornstarch
- 5g garlic powder
- 5g paprika
- 2g salt
- 2g black pepper
- Oil for frying
Sweet Chili Mayo:
- 60g mayonnaise
- 30g sweet chili sauce
- 5ml lime juice
Extras:
- 4 slices crispy bacon
- 2 slices cheddar cheese
- 30ml maple syrup
- 5g lime zest
Method
- For pancakes, combine dry and wet ingredients separately, then mix and cook in a buttered pan for 2–3 mins per side.
- For chicken, soak butterflied thighs in buttermilk and hot sauce. Dredge in seasoned flour mix, then deep fry at 175°C until golden.
- Mix mayo, chili sauce, and lime juice.
- Assemble sandwich: pancake, mayo, chicken, cheese, bacon, maple syrup, lime zest, and top with pancake.
