Ingredients

Serves 2

Mayo Pancakes (Buns):

  • 125g flour
  • 15g sugar
  • 5g baking powder
  • 2g baking soda
  • Pinch of salt
  • 150ml buttermilk
  • 1 tbsp mayo
  • 1 egg
  • 15g melted butter
  • 2.5ml vanilla extract

Crispy Chicken:

  • 2 boneless chicken thighs, butterflied
  • 240ml buttermilk
  • 5ml hot sauce (optional)
  • 125g flour
  • 60g cornstarch
  • 5g garlic powder
  • 5g paprika
  • 2g salt
  • 2g black pepper
  • Oil for frying

Sweet Chili Mayo:

  • 60g mayonnaise
  • 30g sweet chili sauce
  • 5ml lime juice

Extras:

  • 4 slices crispy bacon
  • 2 slices cheddar cheese
  • 30ml maple syrup
  • 5g lime zest

Method

  1. For pancakes, combine dry and wet ingredients separately, then mix and cook in a buttered pan for 2–3 mins per side.
  2. For chicken, soak butterflied thighs in buttermilk and hot sauce. Dredge in seasoned flour mix, then deep fry at 175°C until golden.
  3. Mix mayo, chili sauce, and lime juice.
  4. Assemble sandwich: pancake, mayo, chicken, cheese, bacon, maple syrup, lime zest, and top with pancake.
