Ingredients
Serves 2
- 300g pistachio ice cream
- 50g sun-dried tomatoes
- 2 eggs
- 100g panko breadcrumbs
- Zest of 1 lemon
- Sea salt to taste
- Oil for frying
- 100g crushed pistachios (for garnish only – not used as coating)
Method
- Blend sun-dried tomatoes into pistachio ice cream.
- Scoop into balls and freeze until solid. Dip frozen balls into egg wash, then roll in panko. Freeze again for 30 mins.
- Heat oil and deep fry until golden.
- Serve with a sprinkle of lemon zest and sea salt.
- Garnish with crushed pistachios.
