Ingredients

Serves 2

  • 300g pistachio ice cream
  • 50g sun-dried tomatoes
  • 2 eggs
  • 100g panko breadcrumbs
  • Zest of 1 lemon
  • Sea salt to taste
  • Oil for frying
  • 100g crushed pistachios (for garnish only – not used as coating)

Method

  1. Blend sun-dried tomatoes into pistachio ice cream.
  2. Scoop into balls and freeze until solid. Dip frozen balls into egg wash, then roll in panko. Freeze again for 30 mins.
  3. Heat oil and deep fry until golden.
  4. Serve with a sprinkle of lemon zest and sea salt.
  5. Garnish with crushed pistachios.
