Ingredients
Serves 2
Chicken Parmesan Toastie:
- 2 chicken breasts, pounded thin
- 125g flour
- 2 eggs
- 100g panko breadcrumbs
- 50g grated Parmesan
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- Salt and pepper
- 250ml marinara sauce
- 100g shredded Gruyère and sliced mozzarella
- 4 slices sourdough or ciabatta
- 120ml garlic butter (melted butter + 3 garlic cloves + parsley)
Tomato Sauce:
- 2 tbsp olive oil
- 50g sun-dried tomatoes
- 3 garlic cloves
- 1 tsp chili flakes
- 400g crushed tomatoes
- 120ml cream
- Salt, pepper, basil
Mash:
- 2 large potatoes
- 30g butter
- 60ml cream
- Salt, pepper
Mac & Cheese:
- 120g elbow macaroni
- 15g butter
- 15g flour
- 250ml milk
- 100g shredded cheddar
Method
- Cook and mash potatoes with cream and seasoning.
- Boil pasta; make a roux with butter and flour, whisk in milk, stir in cheese.
- Coat chicken in flour, egg, and panko-Parmesan mix; fry until golden.
- Assemble toastie with chicken, sauce, cheese, and grilled bread.
- Serve with mash, mac, and top with burrata and tomato sauce.
