Look Who's Hangry: Tom Murray's chicken Parmesan toastie with mash, mac & cheese, burrata & parma tomato sauce

Ingredients

Serves 2

Chicken Parmesan Toastie:

  • 2 chicken breasts, pounded thin
  • 125g flour
  • 2 eggs
  • 100g panko breadcrumbs
  • 50g grated Parmesan
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper
  • 250ml marinara sauce
  • 100g shredded Gruyère and sliced mozzarella
  • 4 slices sourdough or ciabatta
  • 120ml garlic butter (melted butter + 3 garlic cloves + parsley)

Tomato Sauce:

  • 2 tbsp olive oil
  • 50g sun-dried tomatoes
  • 3 garlic cloves
  • 1 tsp chili flakes
  • 400g crushed tomatoes
  • 120ml cream
  • Salt, pepper, basil

Mash:

  • 2 large potatoes
  • 30g butter
  • 60ml cream
  • Salt, pepper

Mac & Cheese:

  • 120g elbow macaroni
  • 15g butter
  • 15g flour
  • 250ml milk
  • 100g shredded cheddar

Method

  1. Cook and mash potatoes with cream and seasoning.
  2. Boil pasta; make a roux with butter and flour, whisk in milk, stir in cheese.
  3. Coat chicken in flour, egg, and panko-Parmesan mix; fry until golden.
  4. Assemble toastie with chicken, sauce, cheese, and grilled bread.
  5. Serve with mash, mac, and top with burrata and tomato sauce.
