Ingredients

Serves 2

  • 1 lb prawns, peeled and deveined
  • 2 tbsp jerk seasoning
  • 1 tbsp olive oil
  • 1 tbsp lime juice
  • 1 tsp honey

Carbonara Filling:

  • Fresh lasagna sheets, cooked
  • ¼ cup heavy cream
  • ¼ cup Parmesan
  • 2 egg yolks
  • 2 cloves garlic, minced
  • ½ red onion, diced
  • 2 tbsp butter
  • Ground black pepper
  • Bacon or pancetta bits

Sushi Roll:

  • 1 sheet nori
  • Sushi rice (cooked and seasoned)
  • For Serving:
  • Sriracha mayo
  • Lime wedges

Method
Marinate prawns in jerk seasoning, oil, lime juice, and honey for 15–20 mins. Cook in a hot pan for 2–3 mins each side. Sauté garlic and onion in butter. Mix cream, yolks, Parmesan, and pepper, and stir into pan with whole lasagna sheets. Add bacon bits. On a nori sheet, layer sushi rice, carbonara, and prawns. Roll tightly, slice, and serve with sriracha mayo and lime.
