Ingredients

- 2 cups cooked sushi or short-grain rice (cooled)
- 1 tbsp soy sauce
- 1 tbsp sesame oil or butter
- 1 egg
- ½ cup shredded mozzarella
- ¼ cup grated Parmesan
- 8–10 slices pepperoni, finely chopped
- ½ small red onion, finely diced
- 1 tsp oregano
- 1 tsp chili flakes (optional)
- 1 tbsp flour or cornstarch
- 2 tbsp oil (for frying)
- Marinara or garlic mayo (for dipping)
Method
- In a bowl, mix rice with soy sauce, sesame oil, egg, and flour.
- Stir in cheese, pepperoni, onion, oregano, and chili flakes. Shape into firm discs or press into mini muffin tins.
- Pan-fry each bite for 2–3 minutes per side until crispy or bake at 200°C for 15–20 minutes.
- Let cool slightly and serve with dipping sauce.
