Ingredients

Serves 2

  • 2 cups cooked sushi or short-grain rice (cooled)
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil or butter
  • 1 egg
  • ½ cup shredded mozzarella
  • ¼ cup grated Parmesan
  • 8–10 slices pepperoni, finely chopped
  • ½ small red onion, finely diced
  • 1 tsp oregano
  • 1 tsp chili flakes (optional)
  • 1 tbsp flour or cornstarch
  • 2 tbsp oil (for frying)
  • Marinara or garlic mayo (for dipping)

Method

  1. In a bowl, mix rice with soy sauce, sesame oil, egg, and flour.
  2. Stir in cheese, pepperoni, onion, oregano, and chili flakes. Shape into firm discs or press into mini muffin tins.
  3. Pan-fry each bite for 2–3 minutes per side until crispy or bake at 200°C for 15–20 minutes.
  4. Let cool slightly and serve with dipping sauce.
