Ingredients

Serves 2

  • 10 eggs
  • 2 tbsp mayonnaise
  • 4 strips bacon, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 1 small onion, diced
  • 1 tbsp olive oil or butter
  • ½ cup grated cheese
  • Salt and pepper

For Coating:

  • 1 cup breadcrumbs
  • ½ cup flour
  • 2 eggs
  • 1 tbsp milk
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Vegetable oil for deep frying

Method

  1. Preheat oven to 160°C. Cook bacon, then sauté onion, mushrooms, and tomatoes.
  2. Add spinach until wilted. In a bowl, whisk eggs, mayo, cheese, salt, and pepper.
  3. Mix with vegetables and bacon. Pour into a rectangular glass Pyrex dish and bake for 1 hour 10 minutes.
  4. Chill in fridge for 2–3 hours. Slice into large triangles. Coat each in flour, egg wash, and breadcrumbs.
  5. Deep fry at 175°C until golden and crispy.
