Ingredients

- 10 eggs
- 2 tbsp mayonnaise
- 4 strips bacon, diced
- 1 cup cherry tomatoes, halved
- 1 cup fresh spinach, chopped
- 1 cup mushrooms, sliced
- 1 small onion, diced
- 1 tbsp olive oil or butter
- ½ cup grated cheese
- Salt and pepper
For Coating:
- 1 cup breadcrumbs
- ½ cup flour
- 2 eggs
- 1 tbsp milk
- 1 tsp garlic powder
- 1 tsp paprika
- Vegetable oil for deep frying
Method
- Preheat oven to 160°C. Cook bacon, then sauté onion, mushrooms, and tomatoes.
- Add spinach until wilted. In a bowl, whisk eggs, mayo, cheese, salt, and pepper.
- Mix with vegetables and bacon. Pour into a rectangular glass Pyrex dish and bake for 1 hour 10 minutes.
- Chill in fridge for 2–3 hours. Slice into large triangles. Coat each in flour, egg wash, and breadcrumbs.
- Deep fry at 175°C until golden and crispy.
