Ingredients

- 1 tortilla (flour or corn)
- 1 tablespoon hot sauce (for brushing)
- 1 cup crushed chilli tortilla chips
- 2 eggs, scrambled
- 2 slices bacon, cooked and crumbled
- 1 sausage, cooked and sliced
- Shredded cheddar cheese
- Heinz Mayo
- Sriracha sauce
- A little oil for frying
- Butter
Method
- Preheat the oven to 170°C.
- Brush the tortilla with hot sauce and coat both sides with crushed chilli tortilla chips.
- Hang it over the bars of the oven rack and bake until crisp. Let cool.
- Scramble eggs with butter until just set. Mix in bacon and sausage.
- Fill the baked taco shell with egg mixture, top with cheddar, and drizzle with hot sauce. Serve with sour cream on the side.
