Ingredients

Serves 2

  • 1 tortilla (flour or corn)
  • 1 tablespoon hot sauce (for brushing)
  • 1 cup crushed chilli tortilla chips
  • 2 eggs, scrambled
  • 2 slices bacon, cooked and crumbled
  • 1 sausage, cooked and sliced
  • Shredded cheddar cheese
  • Heinz Mayo
  • Sriracha sauce
  • A little oil for frying
  • Butter

Method

  1. Preheat the oven to 170°C.
  2. Brush the tortilla with hot sauce and coat both sides with crushed chilli tortilla chips.
  3. Hang it over the bars of the oven rack and bake until crisp. Let cool.
  4. Scramble eggs with butter until just set. Mix in bacon and sausage.
  5. Fill the baked taco shell with egg mixture, top with cheddar, and drizzle with hot sauce. Serve with sour cream on the side.
