Ingredients

(Serves 2)

  • 2 sirloin or fillet steaks
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 1 small shallot or onion, finely chopped
  • 1 garlic clove, finely chopped
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 50ml brandy (optional)
  • 100ml double cream
  • Salt and pepper
  • Chopped parsley to finish

Method

1. Season steaks with salt and pepper.    

2. Heat oil and butter in a pan. Cook steaks to your liking, then remove and rest.

3. In the same pan, add chopped shallot and garlic. Soften for 1 minute.

4. Add mustard and Worcestershire sauce.

5. If using brandy, add it now and cook off the alcohol.

6. Pour in the cream. Simmer until slightly thickened.

7. Return steaks briefly to coat in the sauce.

8. Finish with chopped parsley and serve immediately.
