- 1 vanilla pod
- 4 pears peeled
- 150ml sugar
- 400ml water
- 3 strips of orange peel
- Lemon peel
- Toffee Sauce:
- 150g butter
- 300g brown sugar
- 200ml double cream
Method
- Halve the vanilla pod lengthways, scrape out the black seeds, and put it in a large saucepan with the water, sugar, and lemon peel. Bring to a simmer, then add the pears.
- Poach the pears, covered, for 20-30 mins, making sure they are covered in the liquid.
- When pierced with a cocktail stick, they should be tender all the way through.
- To make the sauce, melt the butter and sugar in a pan and bring to a light simmer.
- Whisk in the cream until combined. Increase the heat until the sauce bubbles, then remove it from the heat.
- Pour the sauce over the pear and serve with vanilla ice cream.
