Sarah Butler's poached pear with toffee sauce and vanilla ice cream: Today

Ingredients

Serves: 4

  • 1 vanilla pod
  • 4 pears peeled
  • 150ml sugar
  • 400ml water
  • 3 strips of orange peel
  • Lemon peel
  • Toffee Sauce:
  • 150g butter
  • 300g brown sugar
  • 200ml double cream

Method

  1. Halve the vanilla pod lengthways, scrape out the black seeds, and put it in a large saucepan with the water, sugar, and lemon peel. Bring to a simmer, then add the pears.
  2. Poach the pears, covered, for 20-30 mins, making sure they are covered in the liquid.
  3. When pierced with a cocktail stick, they should be tender all the way through.
  4. To make the sauce, melt the butter and sugar in a pan and bring to a light simmer.
  5. Whisk in the cream until combined. Increase the heat until the sauce bubbles, then remove it from the heat.
  6. Pour the sauce over the pear and serve with vanilla ice cream.
