Ingredients

Serves 4

  • 4 courgettes
  • 200g beef mince and sausage
  • 1 egg
  • 2-3 tablespoon of breadcrumb
  • 50g grated parmigiano
  • 2-3 tablespoon of milk
  • 400g chopped tomatoes
  • 2 cloves of garlic
  • Parsley
  • Basil leaves
  • Salt and pepper
  • EVO

Method

  1. First, cut the courgettes in half lengthwise.
  2. Take the inside pulp out from the courgettes and keep it.
  3. Finely chop the pulp and put it into a bowl along with the meat, the egg, the parmigiano, the breadcrumb, the finely chopped parsley, the finely chopped garlic, salt and pepper as per taste and mix all together.
  4. Then add the milk little by little until the mixture is soft but firm.
  5. Take a bowl and put the chopped tomatoes into it, season with chopped garlic, basil leaves, salt and pepper as per taste and a tablespoon of EVO.
  6. Now take the courgettes and put salt on the inner side and then fill them with the mixture of meat.
  7. Take a baking tray, put a bit of oil at the bottom and then put the courgettes on the tray and pour the tomato on top to cover all the courgettes.
  8. Cover the tray with tinfoil, bake in the oven at 180 for an hour, bake without tinfoil for the last 20 minutes.
  9. Ready to plate.
