Ingredients

- 4 courgettes
- 200g beef mince and sausage
- 1 egg
- 2-3 tablespoon of breadcrumb
- 50g grated parmigiano
- 2-3 tablespoon of milk
- 400g chopped tomatoes
- 2 cloves of garlic
- Parsley
- Basil leaves
- Salt and pepper
- EVO
Method
- First, cut the courgettes in half lengthwise.
- Take the inside pulp out from the courgettes and keep it.
- Finely chop the pulp and put it into a bowl along with the meat, the egg, the parmigiano, the breadcrumb, the finely chopped parsley, the finely chopped garlic, salt and pepper as per taste and mix all together.
- Then add the milk little by little until the mixture is soft but firm.
- Take a bowl and put the chopped tomatoes into it, season with chopped garlic, basil leaves, salt and pepper as per taste and a tablespoon of EVO.
- Now take the courgettes and put salt on the inner side and then fill them with the mixture of meat.
- Take a baking tray, put a bit of oil at the bottom and then put the courgettes on the tray and pour the tomato on top to cover all the courgettes.
- Cover the tray with tinfoil, bake in the oven at 180 for an hour, bake without tinfoil for the last 20 minutes.
- Ready to plate.
