Ingredients
- 225g self-raising flour 130g caster sugar
- 1⁄4 teaspoon ground cloves or ground cinnamon
- 100g butter, cut into pieces
- 3–4 cooking apples, peeled, cored and sliced
- 2 eggs
- a drop of milk
- 1 tablespoon granulated sugar
Whipped vanilla cream:
- 300ml cream
- 1 heaped teaspoon icing sugar
- drop of vanilla extract
Method
- Preheat the oven to 170°C. Line a 20cm round tin with baking parchment.
- Start by sifting the flour into a medium-sized bowl, then add the sugar and ground cloves or ground cinnamon and rub the butter with your fingertips into the flour until the mixture resembles breadcrumbs.
- Add the apple slices to the flour and mix well.
- In another bowl, whisk your eggs and pour into the flour mix along with a drop of milk, stirring well to combine.
- Pour the mixture into your tin and sprinkle with the granulated sugar. Bake for 30–35 minutes until golden brown and springy on the top.
- Remove from the oven, then slice and enjoy.
- Store in an airtight container in the fridge for three days.
