Ingredients

  • 225g self-raising flour 130g caster sugar
  • 1⁄4 teaspoon ground cloves or ground cinnamon
  • 100g butter, cut into pieces
  • 3–4 cooking apples, peeled, cored and sliced
  • 2 eggs
  • a drop of milk
  • 1 tablespoon granulated sugar

Whipped vanilla cream:

  • 300ml cream
  • 1 heaped teaspoon icing sugar
  • drop of vanilla extract

Method

  1. Preheat the oven to 170°C. Line a 20cm round tin with baking parchment.
  2. Start by sifting the flour into a medium-sized bowl, then add the sugar and ground cloves or ground cinnamon and rub the butter with your fingertips into the flour until the mixture resembles breadcrumbs.
  3. Add the apple slices to the flour and mix well.
  4. In another bowl, whisk your eggs and pour into the flour mix along with a drop of milk, stirring well to combine.
  5. Pour the mixture into your tin and sprinkle with the granulated sugar. Bake for 30–35 minutes until golden brown and springy on the top.
  6. Remove from the oven, then slice and enjoy.
  7. Store in an airtight container in the fridge for three days.
  8. Serve with whipped vanilla cream
