Peppers add a sweetness to this Italian chicken dish.

Ingredients

Serves 4

  • 4 chicken legs
  • 4/6 red and yellow bell peppers
  • 1 onion
  • 1 spoon tomato concentrate paste
  • Half cup of water
  • Half cup of red wine
  • Extra virgin olive oil
  • Salt
  • Pepper

Method

1. Take a pot and pour olive oil into It, heat up and add the chicken, sear the chicken until it gets a nice brown colour.
2. Add the wine and let it evaporate, add the fine chopped onion and the tomato concentrate paste, salt and pepper as per taste.
3. Mix it well and add the water, bring to boil.
4. Put the lid on the pot and let it cook at medium heat for 20/30 minutes.
5. Then add the peppers (previously cut in strips).
6. And let it cook for 15 minutes with the lid on.
7. Now you can plate your dish.
