Ingredients

Serves 4

  • 700g stewing beef
  • 2 large onions
  • 2 tablespoon flour
  • 3 tablespoon olive oil
  • 4 cloves garlic peeled and sliced
  • 1 beef stock cube crumbled
  • 250 mls water
  • 3 tablespoons balsamic vinegar
  • Salt and Pepper

Method

  1. Preheat the oven to 160 deg.
  2. Turn the beef in the flour, season and shake off excess.
  3. Heat the olive oil in an oven proof pot over a medium/high heat.
  4. When gently smoking, carefully add the beef and the onions.
  5. Cook on the heat for 15-20 minutes, turning occasionally to make sure everything caramelises evenly.
  6. Add the garlic after 15 mins or so, then the balsamic vinegar, water and stock cube.
  7. Bring to a simmer, cover and put in the oven for 90 mins until soft and tender.
  8. Serve with mash, new potatoes, rice or pasta.
