Ingredients

  • 450g plain flour
  • 1 tsp bread soda
  • 1 tsp salt
  • 100g red cheddar, grated
  • 2 white onions, finely diced
  • 1 bunch chives, shredded
  • 350ml buttermilk

Method

  1. Preheat the oven to 230°C.
  2. Prep the dry mix - sift the flour, bread soda, and salt into a large bowl.
  3. Add flavor – stir in the grated cheese, diced onions, and chives.
  4. Bring it together – pour in the buttermilk and mix until just combined. Let it rest in the bowl.
  5. Shape the dough – turn it out onto a lightly floured surface and gently knead into a round, about 6 inches wide.
  6. Score the top – place on a floured baking tray and use a knife to cut a deep 1-inch cross on top.
  7. Bake – place in the oven at 230°C for 15 minutes.
  8. Adjust the heat – reduce to 200°C and bake for another 25 minutes.
  9. Final crisp – turn the bread upside down and bake for 5 more minutes.
  10. Cool & enjoy – transfer to a wire rack to cool before slicing.
  11. To make homemade butter we will be whisking cream for 10 minutes, and adding this to ice, draining and serving.
