Ingredients
- 1 x shop-bought puff pastry sheet
- 1 leek sliced and washed
- 30g butter
- 1 red apple
- 1 red onion
- 1 tsp wholegrain mustard
- 1 tsp honey
- 1 tbsp olive oil
- 4 Butchers sausages
- Salt and pepper
- 1 egg beaten, to glaze.
Method
- Slice and wash the leek.
- Heat the butter in a wide bottomed pan until it begins to foam. Add the leeks to the butter and gently sweat for about 10 minutes. Season with salt and pepper.
- Meanwhile, slice the onion and apple into 1"slices and place in a mixing bowl. Using a kitchen scissors, chop the sausages into chunks and add this to the bowl. Add the honey, mustard, and olive oil and stir everything together.
- Place the pastry on a parchment lined baking tray and brush the edges with beaten egg.
- When the leeks are softened, place them on the pastry and scatter everything else on top.
- Place in a preheated oven at 170 for 25 minutes.
- Serve with a crisp salad and enjoy!
