Ingredients

- 3 egg, Red yolks
- 225gr caster sugar
- 250 gr mascarpone
- 15/20 savoiardi
- 500g Frozen berries
Method
- First of all start on day before putting the berries into a bowl with 125g of sugar, stir it and let it soak overnight in the fridge.
- On the day, drain the berries into a bowl and keep all the juice.
- Put together the eggs & 100g of sugar into a bowl, whip until the cream is firm & bright for about 10 minutes. Add the mascarpone and whip until the cream is firm.
- Take a tray & start to build your Tiramisu.
- Soak the savoiardi one by one into the berries juice for 2/3 seconds & put on the tray until you cover it all.
- Pour 1/2 of the mascarpone cream over the savoiardi and put half of the berries on top of it.
- Then repeat for the second layer. Let it rest in the fridge for at least 8hr.
