Ingredients

Serves: 4

  • 3 egg, Red yolks
  • 225gr caster sugar
  • 250 gr mascarpone
  • 15/20 savoiardi
  • 500g Frozen berries

Method

  1. First of all start on day before putting the berries into a bowl with 125g of sugar, stir it and let it soak overnight in the fridge.
  2. On the day, drain the berries into a bowl and keep all the juice.
  3. Put together the eggs & 100g of sugar into a bowl, whip until the cream is firm & bright for about 10 minutes. Add the mascarpone and whip until the cream is firm.
  4. Take a tray & start to build your Tiramisu.
  5. Soak the savoiardi one by one into the berries juice for 2/3 seconds & put on the tray until you cover it all.
  6. Pour 1/2 of the mascarpone cream over the savoiardi and put half of the berries on top of it.
  7. Then repeat for the second layer. Let it rest in the fridge for at least 8hr.
