Ingredients
Serves 4
For the fruit
- 1 tbsp. butter
- 6-8 plums, halved and stone removed
- 3-4 apples, cored and cut into quarters
- Dash of balsamic vinegar
- Dash of dark rum (optional)
For the yogurt
- 6-8 cardamom pods
- 1 orange, juiced and zested
- ½ tsp. icing sugar
- 150ml natural yogurt
For the garnish
- Chocolate shavings- use a vegetable peeler on a bar of dark chocolate
- Some biscuit, crushed to make crumbs
- Mint leaves
Method
For the fruit
1. Put a pan on over medium heat.
2. Add the butter and when it starts to foam add the fruit and the sugar.
3. Cook this for about 5 minutes - the fruit should have browned and softened a little by this stage.
4. Mix in the balsamic vinegar, add the rum and cook for a minute or two to burn off the alcohol.
For the yogurt
1. Remove the seeds from the cardamom pods and crush them with a rolling pin
2. Add all of the ingredients to a bowl and mix well.
To serve
1. Divide the fruit between four bowls,
2. spoon some of the yogurt over the warm fruit.
3. Sprinkle a little chocolate and crushed biscuit over the yogurt.
4. Put a mint leaf on top to decorate.
