- 6 cooking apples
- 75g demerara sugar
- 1 cinnamon stick
- 1 vanilla pod
- 300g brown flour
- 100g demerara sugar
- 100g oats
- Pinch salt
- 190g butter
- 1 Weetabix
Cheats Custard
- 175g cream
- 25g milk
- 1 vanilla pod
- 54g egg yolk
- 20g caster sugar
- 22g honey
Method
Prepare the apples:
- Peel, core, and chop the apples into bite-sized pieces.
- Place them in a large baking dish with 75g sugar, cinnamon stick, and the seeds scraped from the vanilla pod.
Make the crumble topping:
- Preheat the oven to 180°C.
- In a large bowl, combine the brown flour, 100g sugar, oats, and salt.
- Cut the butter into small cubes and add it to the dry ingredients.
- Using your fingertips, rub the butter into the flour mixture until it resembles coarse crumbs.
- Break up the Weetabix into small pieces and add them to the crumble mixture.
Assemble the crumble:
- Transfer the softened apples to a greased baking dish.
- Top the apples with the crumble mixture, spreading it evenly.
Bake the crumble:
- Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the crumble topping is golden brown and the apples are bubbling.
Serve:
- Let the crumble cool slightly before serving.
- Enjoy warm with a scoop of vanilla ice cream or custard.
Cheats Custard
- In a saucepan, heat the cream, milk, and the seeds scraped from the vanilla pod.
- In a separate bowl, whisk together the egg yolks, caster sugar, and honey until pale and fluffy.
- Slowly pour the warm milk mixture into the egg yolk mixture, whisking constantly to temper the eggs.
- Pour the custard mixture into a baking dish. Bake in a preheated oven at 120°C for about 20 minutes, or until set.
- Once cooled, blend the custard in a blender or food processor until smooth. Serve warm or chilled.
