Eunice Power's Guinness gingerbread: Today
Ingredients
- 150g butter
- 300g golden syrup
- 200g bark brown sugar
- 250ml Guinness
- 2 teaspoon ground ginger
- 2 teaspoon ground cinnamon
- ¼ teaspoon ground cloves
- 300g plain flour- sieved
- 2 teaspoons bread soda sieved
- 300 ml sour cream
- 2 eggs

Method
- Grease and line a 23cm square tin. Preheat the oven to 170C.
- Put the butter, syrup, sugar, Guinness, ginger, cinnamon and ground cloves into a saucepan and melt over a low heat.
- Take off the heat and whisk in the flour and bread soda.
- Whisk the sour cream and eggs together then beat into the mixture.
- Pour into the lined tin and bake in the oven for 45 minutes until the risen in the centre and coming away from the sides of the tin.
- Serve with whipped cream or custard with some poached plums.
