Ingredients

  • 150g butter
  • 300g golden syrup
  • 200g bark brown sugar
  • 250ml Guinness
  • 2 teaspoon ground ginger
  • 2 teaspoon ground cinnamon
  • ¼ teaspoon ground cloves
  • 300g plain flour- sieved
  • 2 teaspoons bread soda sieved
  • 300 ml sour cream
  • 2 eggs

Method

  1. Grease and line a 23cm square tin. Preheat the oven to 170C.
  2. Put the butter, syrup, sugar, Guinness, ginger, cinnamon and ground cloves into a saucepan and melt over a low heat.
  3. Take off the heat and whisk in the flour and bread soda.
  4. Whisk the sour cream and eggs together then beat into the mixture.
  5. Pour into the lined tin and bake in the oven for 45 minutes until the risen in the centre and coming away from the sides of the tin.
  6. Serve with whipped cream or custard with some poached plums.
