Ingredients
Serves: 4
- 2 medium sized pears, cored and thinly sliced
- Juice of 1/2 lemon
- 2 tbsp flaked almonds
- 2 tbsp golden raisins
- 80g plain flour
- 30g granulated sugar
- 2 eggs, beaten
- 1 tsp vanilla extract
- 300ml full fat milk
- Butter for greasing
- Icing sugar for dusting
- Vanilla ice cream to serve
Method
- Preheat oven to 180oC.
- Lightly grease 4 x 250ml dishes with butter.
- Put pear slices and lemon juice into a bowl and mix to combine
- Then layer the pear slices and raisins into the dishes.
- Whisk together the flour, sugar, eggs, vanilla and milk and pour over the pears. Top with the flaked almonds and bake for 20 to 25 minutes or until set.
- Remove from the oven and dust with icing sugar and serve with vanilla ice cream.
