A quick and easy family favourite that's sure to please. The breadcrumb brings extra crispiness to the dish...
Ingredients
Serves: 4
- 250g Macaroni
- 25g butter
- 25g flour
- 500ml Milk
- 1-2 onions, chopped
- 200g mature white Cheddar, grated
- 3-4 tbsp breadcrumb
- 3-4 tbsp Parmesan Cheese, grated
- Salt & Pepper to season
Method
- Preheat the oven to 180C/350F/Gas Mark 4.
- Cook the macaroni in a saucepan of boiling salted water as per pack instructions, drain and set aside.
- In a second saucepan, melt the butter over a medium heat,
- Add the onions and sauté for 1 minute or so.
- Stir in the flour.
- Using a wooden spoon and allow the flour to cook out for 1 minute to form a roux
- With a whisk, Add the milk a little at a time, stirring continuously until you achieve a thickened, smooth sauce.
- Remove the sauce from the hob and add most of the cheddar and 2 tbsp of the parmesan.
- Stir until combined. Check the seasoning.
- Stir in the macaroni and season with some salt and pepper.
- Transfer to a deep ovenproof dish.
- Sprinkle over the remaining grated cheese and Parmesan and breadcrumbs.
- Place into a preheated oven for 15-25 minutes until golden and bubbling.
- Serve immediately!
