Ingredients

Serves: 4

  • 250g Macaroni
  • 25g butter
  • 25g flour
  • 500ml Milk
  • 1-2 onions, chopped
  • 200g mature white Cheddar, grated
  • 3-4 tbsp breadcrumb
  • 3-4 tbsp Parmesan Cheese, grated
  • Salt & Pepper to season

Method

  1. Preheat the oven to 180C/350F/Gas Mark 4.
  2. Cook the macaroni in a saucepan of boiling salted water as per pack instructions, drain and set aside.
  3. In a second saucepan, melt the butter over a medium heat,
  4. Add the onions and sauté for 1 minute or so.
  5. Stir in the flour.
  6. Using a wooden spoon and allow the flour to cook out for 1 minute to form a roux
  7. With a whisk, Add the milk a little at a time, stirring continuously until you achieve a thickened, smooth sauce.
  8. Remove the sauce from the hob and add most of the cheddar and 2 tbsp of the parmesan.
  9. Stir until combined. Check the seasoning.
  10. Stir in the macaroni and season with some salt and pepper.
  11. Transfer to a deep ovenproof dish.
  12. Sprinkle over the remaining grated cheese and Parmesan and breadcrumbs.
  13. Place into a preheated oven for 15-25 minutes until golden and bubbling.
  14. Serve immediately!
