Shane Smith's bread and butter pudding
Ingredients
- 300ml milk
- 250ml double cream
- 1 tsp vanilla extract
- 3 large eggs
- 1 egg yolk
- 60g caster sugar
- 6-8 slices of day-old white crusty bread
- 80g butter, soft
- 100g marmalade
- 75g dark chocolate chips
- Zest ½ orange
- 2 tbsp granulated sugar
Method
- For the custard, into a saucepan add the milk, cream and vanilla. Heat gently.
- In a separate bowl, whisk the eggs, yolks, zest and sugar.
- Pour the warm milk and cream over the egg mixture to combine.
- Lightly butter your baking dish, set aside.
- Butter you bread slices on both sides.
- Spread marmalade on one side and cut into triangles.
- Place half the bread slices in the base of the dish.
- Sprinkle half the chocolate chips over this layer.
- Layer the remaining bread on top and sprinkle the remaining chocolate over top.
- Preheat your oven to 180C/160C fan.
- Pour the custard over the bread pudding and allow to soak for 30-40mins.
- Sprinkle over the granulated sugar and bake for 35-40mins until golden brown all over
