Flakey sea bass is a perfect pairing for these herby and spicy Asian-style noodles.
Ingredients
- 1 fillet sea bass (or whatever fish you prefer - sea bass will cook fast)
- Rice noodle 200g (soaked in warm water)
- Coconut oil for cooking
- 1 carrot
- 1 courgette
- 1 floret of broccoli
- 1 red onion
- 1 head baby gem
- 3 scallions
- Small bunch coriander
- 1 red chilli
- 2 garlic cloves
- Light soy sauce
Method
- Strain water off noodles, and leave to drain in a sieve.
- Dice chilli and garlic very fine.
- Slice all vegetables, thinly.
- Heat pan, add garlic and chilli in coconut oil.
- Add vegetables to the pan, and fry for one to two minutes (as you still want a crunch).
- Add a handful of noodles and mix around the vegetables.
- Add a dash of soy sauce and reduce slightly and mix very well.
- At the end add, fresh coriander, lime juice, and baby gem.
- Mix well.
- In a separate pan, cook the fish. Heat the pan, sprinkle fish with some salt and fry skin side down.
- When you see a nice colour, turn over on flesh side- juice of half a lemon.
- Cook for a further one minute and take out of the pan.
- Serve noodles in a bowl with the fish on top. It should take 20 minutes maximum to create this simple tasty dish.
