Ingredients

  • 1 fillet sea bass (or whatever fish you prefer - sea bass will cook fast)
  • Rice noodle 200g (soaked in warm water)
  • Coconut oil for cooking
  • 1 carrot
  • 1 courgette
  • 1 floret of broccoli
  • 1 red onion
  • 1 head baby gem
  • 3 scallions
  • Small bunch coriander
  • 1 red chilli
  • 2 garlic cloves
  • Light soy sauce

Method

  1. Strain water off noodles, and leave to drain in a sieve.
  2. Dice chilli and garlic very fine.
  3. Slice all vegetables, thinly.
  4. Heat pan, add garlic and chilli in coconut oil.
  5. Add vegetables to the pan, and fry for one to two minutes (as you still want a crunch).
  6. Add a handful of noodles and mix around the vegetables.
  7. Add a dash of soy sauce and reduce slightly and mix very well.
  8. At the end add, fresh coriander, lime juice, and baby gem.
  9. Mix well.
  10. In a separate pan, cook the fish. Heat the pan, sprinkle fish with some salt and fry skin side down.
  11. When you see a nice colour, turn over on flesh side- juice of half a lemon.
  12. Cook for a further one minute and take out of the pan.
  13. Serve noodles in a bowl with the fish on top. It should take 20 minutes maximum to create this simple tasty dish.
