A rich spaghetti bolognese is a perfect way of hiding loads of vegetables.
Ingredients
Serves 4
- 500g lean beef mince
- 1 x tsp olive oil
- 1 x onion
- 3 x cloves garlic
- 1 x carrot
- 1 x courgette
- 1 x red pepper
- 1 x tin of chopped tomatoes
- 200g passata sauce
- 1 x beef stock cube
- 2 x bay leaves
- Sea salt & black pepper
- 2 x tsp Worcestershire sauce
- Chopped parsley to garnish
- Parmesan cheese to garnish
- 300g dried spaghetti
Method
1. Bring a pot of water to the boil and add in your pasta. Cook for 8-10 minutes.
2. Heat a large pan and add in your olive oil. Add in your mince and cook until brown.
3. In a blender add in your passata, chopped tomatoes and veg and blitz until smooth.
4. Pour over your mince, add your bay leaves and simmer for 15 minutes until the sauce has thickened.
5. Garnish with some parmesan, black pepper and parsley.
