Shane Smith's apple crumble pancakes

Ingredients

Makes: 8 large/16 Small
Prep: 20 mins
Cook: 1 minute each

Crumble Mix

  • 40g plain flour
  • 30g porridge oats
  • 40g butter
  • 30g Caster sugar

Stewed Apples

  • 3 cooking apples
  • 20g butter
  • 1 tbsp caster sugar
  • 60ml water

Pancake Batter

  • 270g plain flour
  • 2 tsp baking powder
  • Pinch salt
  • 2 tbsp caster sugar
  • 260ml milk
  • 2 large eggs
  • 4 tbsp melted butter

Method

  1. For the crumble mix, preheat your oven to 180C/160C fan and line a baking tray with parchment.
  2. In a bowl, add all the ingredients and rub together with your fingertips until a sandy texture is reached.
  3. Place on the tray and spread out.
  4. Place in the centre of the oven and bake for 10-12 minutes or until golden brown.
  5. Remove and cool to room temperature
  6. For the stewed apples, peel & dice. Place into a pot with sugar, water, butter and over a medium heat, cook until the apples are soft.
  7. Set aside until needed.
  8. For the pancakes, in a bowl add all the ingredients and whisk until smooth.
  9. Place a pan over a low/medium heat and add a splash of oil and a tsp of butter.
  10. Spoon on the batter which will be thick and cook for approx. 30 seconds on each side. Adjust the heat accordingly.
  11. Once all the pancakes are made, set aside.
  12. To serve, plate up the pancakes, top with the cooked apple and sprinkle some crumble mix over the top.
  13. Best served with a side of whipped cream or custard.
