A fresh and vibrant stiry fry that's full of colour anf flavour.
Ingredients
Serves 4
- 400g chopped chicken
- 2 tsp sesame oil
- 4 cloves garlic
- 6 scallions diced
- 1 red pepper sliced
- 1 carrot grated
- 100g tenderstem broccoli
- 1 courgette shaved and diced
- Chopped coriander and basil
- 50ml light soya sauce
- 50g honey
- Juice of one lime
- 2 red chilis diced
- 4 tsp of toasted sesame seeds
- 300g basmati rice
Method
1. Heat your pan to a high heat and add in your sesame oil. Fry your garlic and chicken.
2. Add in your peppers, courgette, carrot and fry for three minutes.
3. Combine your ginger, soy sauce, honey, lime juice and chillis.
4. Add to the pan and simmer.
5. Serve with some chopped coriander, scallions and basil on a bed of basmati rice.
