Ingredients

- Whole chicken
- 6 carrots
- 4 parsnips
- 1 onion
- 1 large orange
- 3-4 cloves of garlic
- 1 kg baby potato
- salt
- pepper
- 2 tablespoons of honey
- 2 tablespoons of oil
- curry spice/ paprika/ fresh herbs as thyme/ sage/ rosemary optional
Method
- Peel carrots, parsnips
- Peel onion and chopped into quarters
- Get a big roasting tray, put vegetables on the bottom with baby potatoes.
- Put chicken upside down, add seasoning and honey.
- Slice orange in quarters, squash garlic cloves,
- Rub honey, oil, seasoning, squeeze orange all over chicken, mix with vegetables.
- Put the chicken upside down into the preheated oven 180 degrees for 40 min,
- After 40 min, turn the chicken upside up ( chicken breast up), back i the oven for another 30-40 min till lovely golden.
- Potatoes and vegetables will be lovely roasted.
- Serve all on a large platter and enjoy.
