Juicy pineapple is the perfect pairing for this sticky chipotle pork chops.
Ingredients
Serves 4
Marinade:
- 4 boneless loin pork chops (500g Approx.)
- 1 orange zest
- 2 freshly squeezed orange juice
- 2-3 tablespoons honey
- 1 tablespoon tomato puree
- 1 tablespoon cumin oregano
- 2 teaspoons of chipotle chili paste (more to taste)
Pineapple Salsa:
- 1 pineapple, finely diced
- 1 red pepper, finely diced
- 1 small red onion, finely diced
- Large coriander bunch, chopped
- 1 medium jalapeño, seeds and ribs removed, finely chopped (optional)
- 1 lime juice, more if needed
- Sea salt and plenty of freshly ground black pepper
Method
1. Pat the pork chops dry with a paper towel, season with sea salt and pepper. Combine all ingredients for the marinade, add pork chops and marinade, about 5-10 minutes or overnight if possible.
2. Heat up a non-stick frying pan over medium-high heat. Add a little oil and pork chops to the pan, and fry on both sides until golden, about 4-5 minutes each side.
3. In a medium bowl, combine the pineapple, pepper, onion, coriander, and jalapeño. Add the lime juice, salt & pepper, stir to combine. Add more lime juice if needed.
4. Serve the hot pork chops with pineapple salsa, add more fresh coriander on top to serve and enjoy!
