Ingredients

Serves 4

Marinade:

  • 4 boneless loin pork chops (500g Approx.)
  • 1 orange zest
  • 2 freshly squeezed orange juice
  • 2-3 tablespoons honey
  • 1 tablespoon tomato puree
  • 1 tablespoon cumin oregano
  • 2 teaspoons of chipotle chili paste (more to taste)

Pineapple Salsa:

  • 1 pineapple, finely diced
  • 1 red pepper, finely diced
  • 1 small red onion, finely diced
  • Large coriander bunch, chopped
  • 1 medium jalapeño, seeds and ribs removed, finely chopped (optional)
  • 1 lime juice, more if needed
  • Sea salt and plenty of freshly ground black pepper

Method

1. Pat the pork chops dry with a paper towel, season with sea salt and pepper. Combine all ingredients for the marinade, add pork chops and marinade, about 5-10 minutes or overnight if possible.

2. Heat up a non-stick frying pan over medium-high heat. Add a little oil and pork chops to the pan, and fry on both sides until golden, about 4-5 minutes each side.

3. In a medium bowl, combine the pineapple, pepper, onion, coriander, and jalapeño. Add the lime juice, salt & pepper, stir to combine. Add more lime juice if needed.

4. Serve the hot pork chops with pineapple salsa, add more fresh coriander on top to serve and enjoy!
