Ingredients
Serves 1 (contains approximately 385 kcal)
- 2 slices of wholemeal bread
- 1 tablespoon mayonnaise
- ½ teaspoon Dijon mustard
- 1 ripe tomato, cut into thin slices
- 3 slices cooked turkey slices or use small, cooked chicken fillet or leftover roast, sliced

- Handful mixed baby salad leaves
- Freshly ground black pepper
Method
- Spread the two slices of bread lightly with the mayonnaise followed by the mustard.
- Arrange the tomato slices on top of one of the pieces of bread. Season with pepper to taste.
- Cover with the turkey or chicken and then cover with a Handful of the baby salad leaves on top.
- Put the other slice of bread on top and cut the sandwich on the diagonal.
- Put the Katie's klub sandwich on a plate to serve.
Note: Once the sandwich is made wrap in parchment paper, then tin foil to pack into a suitable container for a lunchbox.
