Ingredients
Serves 6-8
- 600g Irish baby carrots, cleaned
- Knob of butter
- 2 tbsp honey
- 2 star anise
- 1 tbsp chopped parsley
- Maldon sea salt and freshly ground black pepper
Method
- Bring a pot of salted water to the boil
- Blanch the carrots for 3-4 minutes
- Refresh in ice cold water
- Heat a large frying pan over a medium heat
- Add in the blanched carrots and toss for 2-3 minutes
- Add in the butter and toss again
- Carefully pour the honey over and add in the star anise
- Reduce the heat of the pan until slightly bubbling
- Toss occasionally for a further 3-4 minutes until the carrots are warmed through
- Add the chopped parsley & serve
