Ingredients

Serve 6-8

  • 1.5kg floury potatoes, such as Rooster, peeled and cut into even-sized chunks
  • 100ml milk
  • 100ml cream
  • 75g butter
  • sea salt and freshly ground black pepper
  • snipped fresh chives, to garnish

Method

  • Put the potatoes in a large pan of salted water. Bring to the boil, cover and reduce the heat.
  • Simmer for 15–20 minutes, until the potatoes are tender but aren't breaking up.
  • Drain and return to the pan set over a low heat to dry out. Mash the potatoes or pass them through a potato ricer if you want a really smooth finish.
  • Heat the milk, cream and butter in a small pan, until the butter has melted
  • Pour over the masked potato and beat until you have a smooth, creamy mash
  • Season to taste with salt and pepper and serve at once garnished with snipped fresh chives.
