Ingredients
Serve 6-8
- 1.5kg floury potatoes, such as Rooster, peeled and cut into even-sized chunks
- 100ml milk
- 100ml cream
- 75g butter
- sea salt and freshly ground black pepper
- snipped fresh chives, to garnish
Method
- Put the potatoes in a large pan of salted water. Bring to the boil, cover and reduce the heat.
- Simmer for 15–20 minutes, until the potatoes are tender but aren't breaking up.
- Drain and return to the pan set over a low heat to dry out. Mash the potatoes or pass them through a potato ricer if you want a really smooth finish.
- Heat the milk, cream and butter in a small pan, until the butter has melted
- Pour over the masked potato and beat until you have a smooth, creamy mash
- Season to taste with salt and pepper and serve at once garnished with snipped fresh chives.
