Paula Heatley lives in a house where the oven is never off. Having grown up in a cooking household, Paula has carried over her family tradition of baking to the next generation, often cooking and baking for her four children and her husband, a farmer. On Today, she joined Kevin Dundon for Home Cook Kitchen, a new segment where viewers cook their chosen recipe with a professional cook. This sweet apple pudding is an old Irish dessert.
Ingredients
- 115g unsalted butter (soft)
- 115g caster sugar
- 115g soft brown sugar
- 2 eggs
- 1 lemon (grate rind and juice)
- 90g self-raising flour
- 40g ground almonds
- 500g cooking apples
For serving:
- Custard
or
- Ice cream
Method
1. Pre-heat oven to 160 degrees. In a bowl, beat together the butter and sugar until light and fluffy. Gradually add in the eggs, beating well, then fold in the flour, lemon rind and almonds.
2. Mix the apples, brown sugar and lemon juice and place in the bottom of an oven proof dish and place the sponge mixture on top.
3. Don't worry about spreading it totally as it will find its own level as it bakes.
4. Bake for 45-60 minutes until golden brown and cooked through.
5. Serve with custard or ice-cream.
