This is one of the dishes that is easy to have ready the night before and pop it into the oven as you arrive home! It is a family favourite that is colourful, full of flavour and a winner with young and old. I would suggest using chicken thighs and making sure that you get that lovely golden sear on the outside to give the dish an extra layer of flavour. Let the oven do the hard work in this lovely Mediterranean style dish!
Ingredients
- 8 free range chicken thighs
- Sea salt & black pepper
- 2 tsp olive oil
- 4 sprigs of thyme
- 4 beef tomatoes
- 2 red onions
- 1 red pepper
- 1 yellow pepper
- 1 courgette
- ½ bulb garlic
- 2 tsp smoked paprika
- 15ml balsamic vinegar
Method
1. Preheat your oven to 180 degrees Celsius.
2. Heat a pan and season your chicken thighs.
3. Add in your oil and place in your chicken skin side down and fry until caramelised.
4. Slice your red onion, courgette, peppers and garlic and place on a baking tray.
5. Add your seared chicken to the top, drizzle on your olive oil, thyme, paprika and balsamic vinegar.
6. Roast for one hour.
7. Serve with rice, potatoes or a lovely crunchy salad!
