Brian McDermotts's easy chicken fried rice

Brian McDermott's winter warmer recipes - as heard on The Claire Byrne Show on RTÉ Radio 1.

Ingredients

Serves 4

  • 200g chicken breasts diced into small pieces
  • 4 clove garlic, chopped
  • 1 knob fresh ginger, grated
  • Pinch of Turmeric
  • 2 rggs
  • 400g cooked long grain rice
  • 4 spring onions chopped
  • Handful of Frozen Peas
  • Black pepper freshly ground
  • Drizzle of Rapeseed Oil

Method

  1. In a wok, heat the oil and add the chicken to cook for 4 minutes stirring all the time.
  2. Add the ginger and garlic then cook for further 3 minutes. Add the cooked rice.
  3. Allow the rice to heat through then add the chopped spring onions, peas and season with turmeric & pepper.
  4. Continue to cook for 4-5 minutes tossing all the time.
  5. Beat the eggs together and add to the wok stirring the eggs in quickly to give you a fluffy cooked eggs strands throughout the rice.

Brian's Tip: Replace the chicken with ham or bacon. Sprinkle with toasted sesame seeds
