Gina Daly, author of the Daily Dish, joined Brendan O'Connor on RTÉ Radio 1 to share her 'no fuss' picnic recipes.
Ingredients
This beautiful whipped feta cheese is super as a dip with fresh crunchy vegetables, or can be used to elevate your sandwiches for your summer days out!
- 200g feta cheese
- 1 tsp honey (optional)
- 150g Greek yoghurt
- 1 clove of garlic minced
- 1 tbsp olive oil
- Salt and black pepper to taste
Method
- Place all the ingredients (except salt and pepper) in a high sided bowl or plastic jug and use a hand blender to combine together
- Blend until you have a nice smooth consistency
- Taste and season with salt and pepper as desired
