Gina Daly, author of the Daily Dish, joined Brendan O'Connor on RTÉ Radio 1 to share her 'no fuss' picnic recipes.
Ingredients
This no-fuss, no-mess sandwich is ideal for your picnic basket. Using a full round loaf and removing the top and the inside you can fill with your favourite fillings, pop the lid on and slice it up when you are ready to eat. This is a real show-stopper!
Serves 2
- 1 Boule Loaf (Round Loaf)
- 1-2 tbsp Green Pesto
- Pastrami or ham
- 1 ball of fresh mozzarella
- Sliced tomatoes
- Sliced red onions
- Mixed Greens
Method
- Take your loaf and slice the top portion off (about a third of the way down).
- Remove the bread from the inside (I keep this to make stuffing) leaving just a very thin layer around the crust.
- Add a layer of pesto first, then add the pastrami or ham, and then continue to layer up your filling as you like it.
- Once filled to the opening place the 'lid' back on and wrap it up for your picnic when you are ready to eat slice it in half lengthwise and enjoy.
