Eunice Power's strawberry and cream sponge cake: Today

Ingredients

  • 4 large eggs
  • 100g Caster sugar
  • 100g plain flour
  • 1tsp Vanilla essence

To assemble

  • 3 Tbsp strawberry jam
  • 120ml Cream Whipped
  • Punnet of strawberries
  • Icing sugar for dusting

Method

  1. Preheat the oven to 180c conventional or 170C Fan
  2. Grease the line the base of 20cm sandwich tin.
  3. Whisk the eggs and sugar together with a tablespoon of tepid water and a teaspoon of vanilla essence until pale and creamy, and thick enough to leave a trail on the surface when the whisk is lifted.
  4. Sieve the flour, I do this three times. Using a metal spoon gently fold the flour into the whisked eggs and sugar.
  5. Divide the mixture between the two tins, tilting the tins to bake the mixture evenly.
  6. Bake in the oven for 20 minutes until well risen and the cakes spring back when lightly pressed in the center. Turn out and cool on a wire rack.
  7. Served filled with Jam, whipped cream and strawberries.
  8. Dust with icing sugar.
