Ingredients
- 4 large eggs
- 100g Caster sugar
- 100g plain flour
- 1tsp Vanilla essence
To assemble
- 3 Tbsp strawberry jam
- 120ml Cream Whipped
- Punnet of strawberries
- Icing sugar for dusting
Method
- Preheat the oven to 180c conventional or 170C Fan
- Grease the line the base of 20cm sandwich tin.
- Whisk the eggs and sugar together with a tablespoon of tepid water and a teaspoon of vanilla essence until pale and creamy, and thick enough to leave a trail on the surface when the whisk is lifted.
- Sieve the flour, I do this three times. Using a metal spoon gently fold the flour into the whisked eggs and sugar.
- Divide the mixture between the two tins, tilting the tins to bake the mixture evenly.
- Bake in the oven for 20 minutes until well risen and the cakes spring back when lightly pressed in the center. Turn out and cool on a wire rack.
- Served filled with Jam, whipped cream and strawberries.
- Dust with icing sugar.
