Ingredients
- 4 ripe plum tomatoes, sliced
- 1 large cloves of garlic, peeled and grated
- 4 x 150g hake fillet, skin and bones removed
- A hand full of basil leaves, some basil leaves for serving
- 100ml cream
- 50g Parmesan, grated
- 75g Panko breadcrumbs
- Freshly ground salt and pepper

Method
- Pre-heat the oven to 180C (fan).
- Place the sliced tomatoes in the dish and season well with salt and pepper, sprinkle with sliced garlic. Place the Hake on the tomatoes, scatter torn basil leaves on top.
- Season the cream with salt and pepper and pour over the fish. Mix the panko breadcrumbs with the parmesan and sprinkle lightly over the top.
- Bake in a preheated oven for 20 minutes until the fish is just cooked through and the sauce is bubbling with a golden hue.
- Allow to rest for 5 minutes before serving and scatter some basil leaves on top
