Eunice Power's gratin of hake with tomatoes, basil and Parmesan: Today

Ingredients

  • 4 ripe plum tomatoes, sliced
  • 1 large cloves of garlic, peeled and grated
  • 4 x 150g hake fillet, skin and bones removed
  • A hand full of basil leaves, some basil leaves for serving
  • 100ml cream
  • 50g Parmesan, grated
  • 75g Panko breadcrumbs
  • Freshly ground salt and pepper

Method

  1. Pre-heat the oven to 180C (fan).
  2. Place the sliced tomatoes in the dish and season well with salt and pepper, sprinkle with sliced garlic. Place the Hake on the tomatoes, scatter torn basil leaves on top.
  3. Season the cream with salt and pepper and pour over the fish. Mix the panko breadcrumbs with the parmesan and sprinkle lightly over the top.
  4. Bake in a preheated oven for 20 minutes until the fish is just cooked through and the sauce is bubbling with a golden hue.
  5. Allow to rest for 5 minutes before serving and scatter some basil leaves on top
