Ingredients

Pizza Potatoes

  • 6 baby potatoes
  • 500ml tomato passata
  • 1l veg stock
  • 100ml vodka
  • Fresh basil
  • 50g Diced chorizo
  • 100g Mozzarella cheese
  • 1 tbls caster sugar
  • Salt
  • Pepper

Method

  1. Cook the potatoes in the veg stock, cut in half, and set aside for later.
  2. For the tomato sauce, sweat off an onion, add in a shot of vodka and start to heat up the tomato passata in the same pan.
  3. When all is bubbling, add in the sugar and then basil.
  4. Take some of the insides of the potato out and add in the tomato sauce, chorizo & cheese.
  5. Place them in the air fryer for 5mins @ 180C.
