Ingredients

  • 4 marinated pork belly strips or 4 plain pork belly strips
  • 1 bottle of good quality BBQ sauce
  • 2 packets of Bao Buns
  • 1/3 of a pineapple, peeled and cut in small dices or 1 tub of ready cut pineapple chunks
  • 1/2 red chilli deseeded and finely sliced
  • 1 packet of fresh coriander
  • Rocket leaves

Method

  1. If using plain pork belly coat it in the bbq sauce and marinate for a few hrs or overnight. If using pre-marinated pork skip this bit. Place the pork belly on some tin foil and cover it over completely. Pop it in the air fryer at 140 degrees for 1 hr.
  2. After 1 hr open up the tin foil and cook it at 200 degrees for around 10mins to crisp it up. While the pork is cooking make your salsa by mixing the pineapple chunks with the red chilli and fresh coriander.
  3. Heat the Bao Buns either in a steamer or the microwave. Once the pork is done pull the meat away from any of the fat and fill the Bao Buns with the rocket leaves, top with the meat and finish with the pineapple salsa. Serve with wedges and your favourite dip.
